Choose from three guided wine tour and tasting packages, depending on how deeply you want to explore Hatzidakis wines, Santorini’s volcanic terroir and the winery’s underground cave cellar. 

For a focused introduction, choose the 4-wine tasting. For a fuller vineyard-to-cellar experience, choose the 6-wine tasting with vineyard visit. For a more private and premium wine experience, choose the 12-wine tasting with selected older vintages.
 

Guided Tour and Tasting of 4 Wines – €40.00 per person

  • Includes: Guided tour of the winery, starting from the stainless-steel tanks and ending in the barrel cave, where our Vinsanto (a natural sweet wine from sun-dried grapes) is aging. Tasting of 4 wines, each presented in detail.
  • Accompaniment: Goat cheese from Naxos Island and traditional bread-rusks.
  • Setting: Wine tastings take place in the barrel cave, featuring monastery tables and wooden benches.
  • Duration: About 1 hour (or longer, depending on questions).

Guided Tour and Tasting of 6 Wines + Vineyard Visit – €80.00 per person

  • Includes: Visit to the vineyard with our Agronomist or Oenologist, who will explain our philosophy of organic cultivation and answer questions. Continued tour of the winery, from the stainless-steel tanks to the barrel cave, where Vinsanto is aging. Tasting of 6 wines, each presented in detail.
  • Accompaniment: Goat cheese from Naxos Island and traditional bread-rusks.
  • Setting: Wine tastings take place in the barrel cave, featuring monastery tables and wooden benches.
  • Duration: About 1.5 hours (or longer, depending on questions).

Premium Guided Tour and Tasting of 12 Wines – €160.00 per person

  • Includes: Exclusive guided tour by one of our Oenologists or Sommeliers. Comparative tasting of 12 wines, including both old vintages and recent releases. Visit to the vineyard and full tour of the winery, ending in the barrel cave where Vinsanto is aging.
  • Accompaniment: A selection of cheeses from the Aegean islands and traditional bread-rusks.
  • Setting: Presentation in front of our Wine Library (1-8 participants). For larger groups, wine tastings are held in the barrel cave with monastery tables and wooden benches.
  • Duration: About 2.5 hours.
  • Reservation: Please book at least one day in advance.

An Authentic Cave Winery Built with Respect for Nature

The Hatzidakis Winery is located inside a cave under the Family vineyard where the Mavrotragano grape variety is cultivated. The main concern of the Hatzidakis family was not to waste even one hectare of vineyard by building the Winery on the ground. Knowing that grape quantities in Santorini are limited and demand is high, they decided not to uproot even one vine (premno, as they call it in Santorini). Moreover, the energy saving and the protection of the environment is something that the family is concerned a lot with. So, they decided to apply green (bioclimatic) building in the construction of the Hatzidakis Winery following at the same time the traditional architecture of Santorini, that is, the underground buildings that were usually used as canaves (small family Santorini wineries). The Hatzidakis Winery was designed and built in a cave according to the passive systems of coolness and heating. The naturally stable temperature throughout the whole year ensures the perfect conditions for the production and aging of the wines by saving energy, as no air-conditioning system is used in the room. This unique setting, together with our commitment to quality, creates a cave wine tasting experience deeply connected to Santorini’s land, history and wines.
