The Beginning

Hatzidakis Winery
Year of establishment: 1997
Founders: Haridimos Hatzidakis & Konstantina Chryssou

Hatzidakis Winery was founded in 1997 by Haridimos Hatzidakis and Konstantina Chryssou.

Prior to that, both of them worked at the Boutari Winery in Santorini, Haridimos as the Chief Oenologist and Konstantina as the director of the Hospitality Department.

Who Continues This Vision Today

The next generation “takes the baton” with respect, patience, persistence and passion for the Santorini vineyard. Stella, Antonis and Ariadne Hatzidakis, together with a group of young, educated people, continue to evolve the tradition, keeping the values of the Winery alive.

From a Neglected Vineyard to the First Little Canava

It all started when Konstantina showed Haridimos a neglected vineyard of her family at an altitude of 330 meters in the village of Pyrgos Kallistis.

In the vineyard there was a cave which with a lot of work and passion but very little money was made into a small Winery, or as Haridimos used to say a little Canava. Canava was, and still remains, the term Santorinians use for small family wineries.

The vineyard where Canava was located had not been cultivated since 1956, something which was a great opportunity for organic cultivation. It was the first vineyard in Santorini that was cultivated organically and was certified by DIO.

Ever since, each vineyard Haridimos and Konstantina bought or leased was cultivated organically. Thus, we are very pleased to say that Hatzidakis Winery applies the principles of organic cultivation to all of its vineyards.

Our Philosophy Begins in the Vineyard

We strongly believe in the quality of the raw material. At the heart of our philosophy lies a deep respect for the land, the vine and the people who cultivate it with effort, patience and love.

For Hatzidakis Winery, wine is not simply a product. It is an authentic expression of the island, of the Santorini vineyard and of the people who care for it.

As Haridimos Hatzidakis used to say, "a fine wine is made in the Winery, an excellent wine in the Vineyard".

A phrase that captures the magic that is born before the harvest even begins. But also the invisible bond between human and nature, where every drop of wine carries history, care and love.

The Underground Winery

In 2000, our small Canava was now too small for the Vinsanto aging in barrels. And so a vineyard was bought, which had a large cave just below it. This was about to become the cellar of Hatzidakis Winery.

Since 2016, Hatzidakis Winery has been located on the provincial road connecting Pyrgos and Emporio.

It is a special winery in Santorini, well worth visiting because it is entirely underground. It feels as if it was born from the very land that hosts it, with respect for the landscape and the vineyard. The natural temperature and humidity provide excellent conditions for producing, maturing and aging wines, while also reducing the winery’s energy footprint.

The Wines as a Continuation of Our Philosophy

Hatzidakis Winery continues to produce quality wines in limited quantities, faithful to the philosophy of the Hatzidakis family and always aiming at the island's terroir expression.
