A rosé unlike any other! The grapes of the Mandilaria red grape variety, after being harvested and chilled for 24 hours, are taken directly to the press without undergoing maceration. The must is immediately separated under extremely gentle pressure—just as in white wine production. There is no skin contact, and therefore, no color extraction is sought. This approach is chosen because this particular variety is known for its high acidity and its ability to extract color and tannins very rapidly.
The name "Rosette" is inspired by the rosette, an emblem resembling a rose often seen on medals. While searching for a name for our wine, which has this distinct rose-pink hue, we decided on this one, as its shade directly evokes the beauty of the rose flower.
