Vineyards: Selected vineyards from Pyrgos and Megalochori.
Vinification: Direct pressing of the grapes and fermentation with indigenous yeasts under controlled temperature (17-18°C).
Maturation: Aged on the noble lees for 12 months in stainless steel tanks, followed by an additional 12 months of maturation in French oak barrels.
Bottling: Unfiltered.
Bottle Size: 1.5L Magnum (Exclusively released in 300 magnum bottles)
Organoleptic characteristics: Yellow color with distinct golden highlights. Aromas of white flowers, citrus fruits, and honey. Dynamic and intense on the palate with lively acidity. Pronounced minerality and a long-lasting finish.
Serving Suggestions: Large fatty fish, white meat such as poultry and pork. Beef, whether slow-cooked in a sauce or simply prepared. It is also a wonderful match for creamy and smoked cheeses.
Suggested Serving Temperature: 14-16˚C
It can be aged for more than 10 years.
