Vinification: Handpicked grapes were placed in a cold room overnight. Direct pressing of the grapes followed by fermentation under controlled temperature 17-18°C with indigenous yeasts..
Maturation: In stainless steel tanks for 6 months.
Bottling: Unfiltered.
Bottle Size: 750mL & 1.5L Magnum (Limited quantities)
Organoleptic characteristics: Bright yellow color. Aromas of lemon/lime and white flowers. High minerality and salinity. Soft and airy on the palate with refreshing acidity and a long finish.
Serving suggestion: Shellfish dishes, green salads, asparagus served with white sauce and local Cycladic cheeses and meats.
Suggested serving temperature: at 12-14˚C.
It can be aged for more than 5 years.
One of Haridimos Hatzidakis’ greatest dreams was to cultivate more and more vineyards in Santorini organically, with the ultimate goal of one day producing all the winery’s wines exclusively from the family’s own vineyards. A dream that was abruptly cut short when he passed away in 2017.
Some beloved vine growers of Santorini-hardworking people-stood with empathy by the family's side, wanting to support the three children, Stella, Antonis, and Ariadni. The long-standing collaboration continues to this day, a testament to the unwavering trust they have in the Hatzidakis family and the Winery team.
As a tribute to the vine growers who acted as “family” and in remembrance of the vision of the late Haridimos, the wine that until then was simply called “PDO Santorini” had the word “Familia” added to its name in 2018.
