What is the lees aging process? 

Aging on lees is the process in which the wine matures on the fine lees (mainly autolyzed yeasts). This aging can be done either by stirring the wine to keep the lees in suspension or without stirring.

How does lees aging affect wine characteristics?

Wines aged on the lees usually exhibit:

  • Creamy texture
  • Notes of nuts and bread
  • Richer and more complex mouthfeel
  • Greater complexity and aging potential
