For a wine to carry the designation of Vinsanto, the wine should me made from the island’s white grape varieties, and at least 51% of grapes must come from Assyrtiko variety. The most common blend used is Assyrtiko (>51%) and Aidani.
Vinsanto wine is traditionally made from the island’s white grape varieties. After harvest, the grapes are laid out to sun-dry on special mats. The drying process can last from 10 to 16 days, depending on the desired sugar concentration. When the grapes collected they pressed in a hydraulic press, and the extracted juice is transferred to stainless steel tanks for alcoholic fermentation and subsequently to oak barrels for maturation.
Vinsanto wines display a deep amber to brown color, a result of sun-drying and oxidative aging. On the nose, they exhibit aromas of dried fruits, honey, caramel, spices, coffee and chocolate. On the palate, the richness is pronounced, with high acidity, concentrated body, and a long, expressive finish.
