What happens during wine fermentation?

During alcoholic fermentation, the most important process is carried out by yeasts, which convert the sugars of must (glucose and fructose) into ethanol.

What is the difference between natural and controlled fermentation?

Natural fermentation is carried out by yeasts naturally present on the grape skins, including Saccharomyces and non-Saccharomyces species, creating more complex and unpredictable flavors. In contrast, commercial yeast strains are a known, standardized strain.
