Family Vineyards: Family vineyards and vineyards from the Viticulturists that we consider as family at the villages Pyrgos and Akrotiri.
Vinification: Handpicked grapes were placed in a cold room overnight. Direct pressing of the grapes followed by fermentation under controlled temperature 17-18°C with indigenous yeasts..
Maturation: For 5 months in stainless steel tanks.
Bottling: Unfiltered.
Organoleptic characteristics: Bright lemony yellow with green hues. Flowery and fruity nose with characteristically green hints. Fresh and promising on the palate with a strong and refreshing acidity on the finish. Terroir driven with early mineral notes and long aftertaste.
Serving suggestion:
Matches well with shellfish and fish plates in general, green salads, asparagus white sauce meats and cheeses from Cyclades complex.
Suggested serving temperature: at 12-14˚C.
It can be aged for more than 5 years.
