Through the “kouloura” training system, we aim to create the ideal microclimate for the vine. The grapevine is protected from the strong winds of Santorini and the intense sunlight, while the soil’s natural moisture is utilized to maintain humidity balance under the island’s extremely dry conditions.

How does Kouloura affect grape quality?

The microclimate created by the kouloura training system, through protection and shading, is ideal for grape development and ripening. Selecting only 2-3 canes for the formation of the new kouloura reduces yield to 200–300 kg per stremma, contributing to the production of high quality grapes with concentrated juice.
